I never thought I could possibly lead a vegetarian lifestyle

I just looked at my journal, and I have not had any chicken, beef, turkey, etc. since Sunday.

The post surgery program that I’m in encourages a more mediterenean diet lifestyle and for the first time, I really think I might be able to do it.

I made two really good vegetarian meals in my crockpot this week, enchilada casserole and quinoa casserole.   Both made in the crockpot and both INCREDIBLY yummy. 

I have had fish and other seafood this week as my protein as well.  That is part of the whole mediterenean diet thing.  Lots of fish and nonmeat proteins.

I feel so good about it.  It just feels possible now.

I’m going to aim to only make chicken or turkey once a week.  I might be eating the leftovers from that meal, but I’m going to try to make my other meals non-meat or fish meals.
